Virgin Voyages is refreshing menus at two onboard restaurants and at its Beach Club at Bimini, led by Chef Levi Mezick, the line’s senior director of culinary program development. The changes at The Wake and The Dock are available now, while the new Bimini menu begins rolling out on 16 October. The most surprising item may be on the island: Bahamian and Caribbean dishes designed by Chef Rashida Holmes.
At The Wake, the restaurant from Michelin-starred chef Brad Farmerie, brunch includes a Waldorf Salad, Russet Sweet Potato Hash and Portobello Mushroom Benedict. Dinner offerings vary by ship and include Chilled Corn Soup, Leek & Potato Soup, Pan-Roasted Salmon, Grilled Swordfish and Caramelized Sea Scallops. New items include Tuna Tartare on select ships, Bacon-Wrapped Twice-Baked Potatoes fleetwide and Oysters Rockefeller as a “Treat Yourself” option, with two vegan and gluten-free options at brunch and dinner.
The Dock is the Mediterranean-inspired, shareable concept. Sides and small plates include Jeweled Tabbouleh, Sautéed Eggplant, Trumpet Royale Mushrooms, Red Lentil Dip, Turkish Deviled Eggs and Kebbeh. From the grill come Pork Souvlaki and Beef Kafta Skewers, with seafood options of swordfish, yellowfin tuna and poached shrimp, and a Plum Pita Tart for dessert on Resilient Lady only.
At the Beach Club at Bimini, the menu features Curry Chicken Roti, Snapper Patties, Tamarind BBQ Skewers, Marinated Grilled Shrimp, Spicy Fruit Chow and Mac and Cheese. The rollout begins with Resilient Lady in mid-October, followed by Scarlet Lady in late October and Brilliant Lady in mid-November, with Valiant Lady getting it in April 2027 when it returns to Bimini. Guests who like to plan meals around destination days should note which ship they are on.
