Seabourn Cruise Line is taking the regional approach of its Earth and Ocean venue and applying it to all onboard dining across the fleet. Menus will emphasize local ingredients, regional flavors, traditional techniques and more refined presentation, so the food on a ship in one part of the world should look different from the food in another.
The Patio’s nightly menus will be reworked, and new offerings include Chef’s Market Finds in The Restaurant, scenic cruising brunches and regional seafood boils. Pasta and pizza crusts will be made onboard. On the beverage side, Seabourn is adding a curated wine list and paid tastings of rare spirits under the name Unobtainium, with options of four or eight pours.
Seabourn is also developing food-focused shore excursions, and its chef-led market visits will continue and expand in 2027. Pricing for the new tastings has not been announced, and the changes are scheduled to roll out gradually over the next year rather than appearing on every ship at once.
For guests, the practical question is timing. Because the rollout is staged, a sailing in the coming months may include only part of the new program. Travelers who book for the food should ask the line which ships and itineraries already have the updated menus, and whether the rare spirit tastings will be bookable in advance.
